This recipe is perfect to pop into the oven while kids are unwrapping presents. No one will come away hungry from this hearty breakfast.
Bacon and Egg Breakfast Casserole Recipe
Recipe by Six Sisters
- 3 cups croutons
- 1/4 cup butter, melted
- 2 cups shredded cheddar cheese
- 6 eggs
- 1-3/4 cups milk
- 1 green bell pepper, diced
- 1 tbsp prepared mustard
- Salt and pepper, to taste
- 12 slices bacon, cooked and crumbled
Preheat oven to 325 degrees F. Coat a 9×13-inch baking dish with nonstick cooking spray. Spread croutons evenly in the bottom of the dish and drizzle with melted butter. Top with shredded cheddar cheese. In a medium bowl, whisk together eggs, milk, green pepper, mustard, salt and pepper until combined. Pour egg mixture over cheese into baking dish and sprinkle with crumbled bacon. Bake 40 minutes and allow casserole to stand for 10 minutes before serving.
