Christmas morning is already chaotic enough without the extra hassle of cooking.  So, why not do all the prep when little kids are fast asleep and you're waiting up for Santa?  This is a great recipe to throw together on Christmas Eve.

Gooey Caramel Pull-Aparts

Recipe by Six Sisters

  • 16 frozen dinner rolls (Rhodes rolls are the best)
  • 1 pkg. (3.5 ounces) cook n serve butterscotch pudding (not instant)
  • 1/2 cup chopped pecans (or walnuts)
  • 3/4 cup brown sugar
  • 6 Tbls melted butter

Thaw frozen roll dough  in a zip lock bag for about 2 hours just until thawed. Don’t let them rise.  Cut each roll into 6 pieces.  We have found that scissors are the easiest way to cut the dough.  Just make sure they are sanitized.
Grease bundt pan (or 2 bread pans).  Sprinkle nuts on bottom.  Arrange 8 of the cut rolls over nuts.  Sprinkle 1/2 package of dry pudding over rolls.  Mix sugar and melted butter together and drizzle half over rolls. Then repeat with the other 8 rolls cut up, pudding, and sugar/butter mixture.   Can sprinkle with a little bit of cinnamon.

Cover with plastic wrap that has been sprayed with nonstick cooking spray and let rise overnight or for at least 8 hours.

Bake at 350 for 30 to 35 minutes.  Cool no longer than 5 minutes.  Turn pan over on serving dish and enjoy!

This is a great little recipe to throw in the oven while the kids are busy scoping out the presents under the tree.  Plus, you'll all have something warm and tasty to look forward to once all of the gifts are unwrapped. 

Mini Puffed Oven Pancakes with Berry Sauce

Recipe by Our Best Bites

Pancakes

  • 1/2 cup flour 
  • 3/4 cup milk
  • 2 eggs
  • 1/8 teaspoon salt
  • 2-3 tablespoons butter, melted
  • Powdered sugar
  • Whipped cream or nondairy whipped topping, optional

Place mini muffin pan (or cast iron skillet) in oven and heat to 400 degrees.  While oven is heating, place flour, milk, eggs, and salt in a blender and blend until smooth.  Carefully remove the pan from the oven (don’t forget it’s hot!) and quickly spray the wells with non-stick spray, or brush with melted butter.  But we’re going for quick and easy here so I just grab the spray.  (If using cast iron pan, coat entire pan surface with butter).  Fill muffin wells 3/4 full with batter.  Place pan in oven and bake for 15-20 minutes, until puffed and slightly golden on top.  Remove puffs and place on plate or platter.  Drizzle with melted butter and sprinkle with powdered sugar.  Drizzle with berry sauce and top with cool whip or whipped cream, or serve with sauce and/or maple syrup for dipping.
Quick and Easy Berry Sauce

  • 6 large frozen or fresh strawberries
  • 3 tablespoons berry jam
  • Sugar, to taste

If using frozen berries, place berries and jam in a microwave-safe bowl and heat for  about 1 minute.  Use a fork to stir and mash everything together (cut strawberries if necessary), or place everything in a blender and pulse a few times until desired consistency is reached.  Add sugar to taste for sweetness and a few teaspoons of water or juice only if needed for consistency.

Sugar and that touch of extra spice make these gingerbread waffles a festive addition to any holiday morning traditions.

Gingerbread Waffles

Recipe by Six Sisters

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¾ tsp ground ginger
  • ¼ tsp ground nutmeg
  • Pinch ground cloves
  • ½ tsp salt
  • 2 eggs
  • 1/3 cup sugar
  • ¾ cup milk
  • ½ cup molasses
  • ¼ cup butter, melted

Preheat waffle iron.  In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
In a separate bowl, beat the eggs and sugar together until thick and foamy.  Stir in the milk and molasses.  Add liquid mixture to the dry ingredients and stir until well-combined.  Slowly fold in the melted butter.

Spray hot waffle iron with nonstick cooking spray.  Follow the manufacturer’s directions for your waffle maker to measure batter and cook waffles until finished.

Tired of the same old family breakfasts?  Why not spice up your Christmas morning with these tangy taquitos!

Breakfast Taquitos with Lime-Chipotle Dip

Recipe by Our Best Bites

Taquitos:

  • 2 tsp extra virgin olive oil
  • 12 large eggs
  • 1/2 cup sour cream
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1 1/2 cups grated pepper jack cheese
  • 1/4 cup chopped roasted red bell peppers
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1-2 tsp hot sauce
  • 16 6″ flour tortillas
  • Cooking spray or olive oil

Dipping Sauce:

  • 1 1/2 cups  sour cream
  • 1 tbsp fresh lime juice
  • 1/4 tsp chipotle chili powder
  • 1/2 tsp kosher salt

Preheat oven to 425 degrees.  Line a rimmed baking sheet with foil for easy cleanup.  Spray with cooking spray or lightly brush with oil and set aside.
Heat olive oil in a large nonstick skillet over medium heat.  Crack eggs into large mixing bowl.  Whisk in 1/2 cup sour cream, salt, pepper, and garlic powder.  When skillet is hot, add egg mixture to pan.  Using a rubber spatula, gently scrape bottom of pan and fold eggs over to scramble.  Remove from heat when slightly undercooked.  Add cheese, roasted red peppers, green onions, cilantro, and hot sauce to taste.  Gently fold to combine.

Warm tortillas in microwave to ease rolling process.  Working with a few tortillas at a time, place a scant 1/4 cup egg mixture into the center of each one and roll up into a cylinder.  Place rolled tortillas on prepared baking sheet, seam-side down, so they are not touching each other.  When all tortillas are rolled and filled, lightly spray tops with cooking spray, or lightly brush with olive oil.  Bake for 15 minutes or until edges are golden brown and crisp.

While taquitos are baking, coming 1 1/2 cups sour cream, lime juice, chipotle chili powder and kosher salt.  Stir to combine and store in fridge.  Remove taquitos from oven , let cool for 5 minutes, and then serve with dipping sauce.

Baked Ham and Egg Cups

Recipe by Our Best Bites 

  •  4 eggs
  • 1 cup egg substitute or an additional 4 whole eggs
  • 3/4 cup shredded low-fat sharp cheddar cheese
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup cottage cheese
  • 5 oz frozen spinach, defrosted, water squeezed out and roughly chopped
  • (that’s half a standard frozen box of spinach)
  • 1/3 cup roasted red peppers, diced 
  • 1 oz finely diced ham, Canadian bacon, or crumbled bacon (about 1/4-1/3 C)
  • 1/4 cup sliced green onions
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper
  • 1/2 tsp hot sauce
  • 12 slices ham

Preheat oven to 350 degrees F.  In a bowl, combine all ingredients (except ham slices) and stir well.
Spray a muffin tin with nonstick spray and place one piece of ham in each well to form a bowl.  

Evenly divide egg mixture between the 12 muffin wells (about 1/4 C each), being careful to keep ingredients evenly distributed.  You want them to fill right up to the top.

Place in the preheated oven and bake for 15-20 minutes. The tops should be puffed and just barely set on top. Eggs will sink after cooling.

Cream Cheese-Stuffed Lemon French Toast with Strawberries

Recipe by Our Best Bites

French Toast

  • 6 large, stale butter croissants
  • 1 8-ounce package cream cheese
  • 1 1/4 cups powdered sugar, divided
  • 2 lemons
  • 1 1/4 teaspoons lemon extract
  • 2 eggs
  • 1 1/2 cups milk

Strawberry Sauce

  • 1 pint fresh strawberries, washed, stemmed, and chopped
  • 1/3 cup sugar
  • 1 tsp vanilla
  • Sweetened Whipped Cream 
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar

Slice the croissants in half lengthwise. Set aside.
In a medium mixing bowl, combine the cream cheese, zest of one lemon, strained juice of one lemon, and 3/4 cup powdered sugar. Mix with an electric mixer until light and fluffy.

Spread the lemon cream cheese mixture over the bottoms of the croissants and then replace the tops, pressing down to flatten. Cut into halves (or even fourths if necessary) and arrange the pieces evenly in a 9×13″ pan lightly sprayed with nonstick cooking spray.

Whisk together the milk, eggs, lemon extract, zest from the second lemon, and remaining 1/2 cup of powdered sugar. Pour evenly over the croissants and cover with aluminum foil. Refrigerate for 8-10 hours.

When ready to bake, preheat oven to 350. Bake covered for 30 minutes and then remove the foil and bake for another 20-30 minutes or until the croissants are golden brown and the liquid is absorbed. Remove from the oven and allow it to stand for 5-10 minutes. Cut into squares and top individual servings with Strawberry Sauce, fresh sliced strawberries, and, if desired, sweetened whipped cream. 

For the sauce: Wash strawberries and remove stems. If you’re feeling ambitious, you can roughly chop the berries, but I say you’re already feeling ambitious enough by making your own strawberry sauce. So don’t sweat it.

For the whipped cream: Combine whipping cream and powdered sugar in a large bowl. With an electric hand mixer, beat whipping cream until soft peaks form. Serve immediately with pie, cake, ice cream sundaes, etc.

Baked Oatmeal

  • 3 cups oats (not quick-cooking)
  • 3/4 cup brown sugar
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 3/4 cup Craisins, raisins, dried cherries, or other dried fruit
  • 1 cup milk
  • 1/2 cup butter, melted (you can substitute applesauce for 1/4 c. of the butter if you want)
  • 2 tsp. vanilla
  • 2 eggs

Preheat oven to 350. In a large bowl, combine the oats, brown sugar, cinnamon, baking powder, salt, and Craisins. In a smaller bowl, mix together milk, butter, vanilla, and eggs. Add the liquid mixture to the dry mixture and whisk to combine. Pour into a deep 9″ pie plate or an 8×8″ or 9×9″ baking dish. Bake for 40 minutes or until the top is golden brown. Serve immediately with a splash of warmed milk.

Sugared out?  All of the Christmas morning candy can get a bit overwhelming, but not to worry.  This casserole makes an appetizing breakfast--no sugar added.

Breakfast Casserole with Spinach, Peppers, and Mushrooms

Recipe by Karen Bellessa Petersen

  • 4 cups cooked cubed potatoes (you can easily use leftover baked potatoes)
  • 1 cup sliced mushrooms
  • 1-2 cups fresh spinach 
  • 1 lb ground breakfast sausage, cooked and drained (substitute cubed ham or bacon, if you prefer)
  • 6 eggs 
  • 1/4 cup milk
  • 1 cup grated sharp cheddar cheese
  • 1/2 tsp garlic powder
  • 1 tsp ground mustard
  • 1 Tbsp dried onion flakes 
  • ½ cup diced red bell pepper
  • Salt and pepper
  • Salsa

Spray the inside of a 4-6 quart slow cooker.  Use a foil collar on the hot spot of your slow cooker.  Place potatoes on bottom of cooker.  Salt and pepper. Sprinkle mushrooms and spinach on top of potatoes. Top with sausage, peppers and onions. 
In a small bowl, whisk the egg, milk, garlic powder and ground mustard together.  Salt and pepper the eggs.  Pour over the top of the sausage.  Sprinkle the cheese evenly over the eggs.

Cover and cook on high for about 2 hours or on LOW for about 4.  Scoop out and serve with salsa.

  • 1/2 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1 cup sour cream
  • 1 tsp. vanilla
  • 1 3/4 cups flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • Sugar-cinnamon mixture

Cream together shortening and sugar. Add the egg, then the sour cream and vanilla. Stir in flour, baking powder, and baking soda. Pour into 9x13-inch pan. Sprinkle sugar-cinnamon mixture on cake. Bake at 325 degrees for 30-35 minutes.

  • 5 cups flour
  • 1 tbsp baking soda
  • 2 tsp ginger
  • 1 tsp nutmeg
  • 1 tsp salt
  • 2 2/3 cups water
  • 1 ½ cup molasses
  • 1 cup butter, melted
  • 4 eggs, slightly beaten

Sift together flour, baking soda, cinnamon, ginger, nutmeg, and salt.  In a separate bowl, combine water, molasses, butter, and eggs.  Gradually add molasses mixture to flour mixture, blending just until smooth.  Cook on hot griddle.

Spinach and Mushroom Frittata

  • 6 eggs, lightly beaten
  • Salt and pepper to taste
  • 2 garlic cloves, minced
  • 3 mushrooms, sliced
  • 1 cup fresh spinach
  • 1/2 cup - 1 cup shredded cheese

Spray an oven-safe dish that fits inside your large slow cooker with non-stick cooking spray.
Combine the eggs, salt and pepper, garlic, mushrooms, spinach in the dish.  Sprinkle the top with cheese.

Place dish in the bottom of the slow cooker.  Cover and cook on HIGH for 90 minutes to 2 1/2 hours.  

Slice and serve.

With the snow glistening outside and that extra nip in the air, sometimes it is nice to take away the early morning chill with a hearty plate of chili and eggs.

  • 4 large eggs
  • ½ cup sharp cheddar cheese, grated
  • Salt and pepper to taste
  • 1 15-oz. can chili
  • Shredded cheese for garnish

In a bowl, beat eggs until they are a light lemony color.  Heat a medium skillet and coat with nonstick cooking spray (I use bacon grease when I have it.  Add the eggs to the skillet, then add the cheese, salt, and pepper.  Cook until the eggs are completely cooked through but not dried out.  While eggs are cooking, heat the chili in a small saucepan until hot.  Divide the eggs onto two plates, and pour the heated chili over the eggs; top with a little shredded cheese.

With little kids waking up at the crack of dawn to tear into presents, who knows if you can get up early enough to get the cooking underway.  So, why not do all of the work in advance?

Blueberry French Toast

Recipe by Ann Romney 

  • 12 slices Texas toast, or 1 loaf Italian or French bread, cut into cubes
  • 1 (8 oz.) package cream cheese, cut into cubes
  • 1 cup fresh blueberries (or 16-oz. package frozen blueberries)
  • 12 eggs
  • 2 cups milk
  • ½ cup maple syrup

Spread half of bread cubes in a greased 9x13-inch pan.  Scatter cream cheese cubes over bread.  Cover evenly with blueberries.  Add remaining bread cubes.  Combine eggs, milk, and syrup.  Mix well.  Pour over breach mixture.  Cover with foil and refrigerate for a few hours or overnight.
Preheat oven to 350 degrees F.  Bake covered dish 30 minutes.  Remove foil and back an additional 30 minutes or until set.

Serve with buttermilk syrup

Buttermilk Syrup

  • ½ cup butter
  • ½ cup buttermilk
  • 1 cup sugar
  • 1 tsp light corn syrup
  • 1 tsp baking soda 
  • 1 tsp vanilla

Combine butter, buttermilk, sugar, and corn syrup in a saucepan and bring mixture to a boil, stirring until butter is melted and sugar dissolved.  Remove from heat and add baking soda and vanilla.  Serve warm.

Bacon and Egg Breakfast Casserole Recipe

  • 3 cups croutons
  • 1/4 cup butter, melted
  • 2 cups shredded cheddar cheese
  • 6 eggs
  • 1-3/4 cups milk
  • 1 green bell pepper, diced
  • 1 tbsp prepared mustard
  • Salt and pepper, to taste
  • 12 slices bacon, cooked and crumbled

Preheat oven to 325 degrees F.  Coat a 9×13-inch baking dish with nonstick cooking spray.  Spread croutons evenly in the bottom of the dish and drizzle with melted butter.  Top with shredded cheddar cheese.  In a medium bowl, whisk together eggs, milk, green pepper, mustard, salt and pepper until combined.  Pour egg mixture over cheese into baking dish and sprinkle with crumbled bacon.  Bake 40 minutes and allow casserole to stand for 10 minutes before serving.

Baked Apple Pie French Toast

  • 12 slices Texas toast  
  •  1 (21 ounces) can apple pie filling
  • 8 eggs
  • 2 cups milk
  • 2 teaspoons vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • TOPPING:
  • 1 cup packed brown sugar
  • 1/2 cup cold butter, cubed
  • 1 cup chopped pecans
  • 2 tablespoons corn syrup

Arrange 6 slices of bread in a greased 13-in. x 9-in. baking dish. Spread with pie filling; top with remaining bread. In a large bowl, whisk the eggs, milk, vanilla, cinnamon and nutmeg. Pour over bread.  Cover and refrigerate overnight and remove from fridge about 30 minutes before baking).
Place brown sugar in a small bowl. Cut in butter until mixture resembles coarse crumbs. Stir in pecans and corn syrup. Sprinkle over French toast.

Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Yield: 10 servings.

Chocolate is always a classic on Christmas morning, but this berry sauce adds a fresh twist to these incredible waffles.

Double Chocolate Waffles with Berry Sauce

Recipe by Our Best Bites

  • 2/3 cup flour
  • 1/3 cup corn starch
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/8 tsp cinnamon
  • 6 tbsp granulated sugar
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1/2 cup mini chocolate chips
  • Berry Sauce & Topping
  • 1/4 cup raspberry  or strawberry jam 
  • 2 tbsp hot water
  • 3 cups berries, any combination, fresh or frozen
  • powdered sugar to taste, optional

To make berry sauce, combine jam and warm water and whisk until combined. Gently stir in the berries until combined. Gently smash with a fork to break up larger berries and leave as chunky as you like.  Depending on the sweetness of the berries, you can add a little powdered sugar if you’d like.  Set sauce aside.
Preheat waffle iron.

Whisk together flour, cornstarch, cocoa powder, baking powder and soda, salt, and cinnamon. 

In a separate bowl whisk together sugar, milk, oil, egg, and vanilla. Whisk for a minute so it gets a little frothy.

Slowly add the wet ingredients into the dry a little at a time, whisking until just combined; be careful not to overmix. Stir in the chocolate chips. This is a pretty thin batter, so don’t be expecting something that looks like a pancake batter. 

Ladle batter into waffle iron, being careful not to overfill.  Bake according to the instructions for your waffle iron.

Two ingredients.  That's all you need to turn your Christmas breakfast from a humdrum, everyday meal into a special treat.  This sauce goes perfectly with crepes, pancakes, waffles, and french toast.

Chocolate Hazelnut Sauce

Recipe by Six Sisters

  • 1 cup chocolate syrup
  • ½ cup chocolate hazelnut spread, such as Nutella 

In a small saucepan over low heat, whisk together chocolate syrup and hazelnut spread until warmed through.

Who says cereal can't make a special Christmas treat?  And what could be simpler?  Kids love it, and here's a granola recipe mom and dad will be sure to love too! 

Grandma’s Way-to-Start-the-Day Granola

Recipe by Jenna Smith, Worldwide Ward Christmas Cookbook

  • 10 cups regular oatmeal
  • 2 cups almonds, slivered or sliced
  • 2 cups coconut
  • 2 cups packed brown sugar
  • ¾ cup oil
  • ½ cup peanut butter
  • ¾ cup honey
  • ¾ cup water
  • 2 tsp vanilla
  • Assorted dried fruit

Mix oatmeal, almonds, coconut, and brown sugar.  In a medium saucepan, heat oil, peanut butter, honey, water, and vanilla until peanut butter melts.  Pour over dry ingredients and mix.  Spread on two large cookie sheets.  Bake at 250 for 45 minutes, stirring once during baking.  Let cool.  Add dried fruit; we like dried cranberries and apricots.  Makes 16 cups.

With just five basic ingredients, you can whip up a gourmet Christmas breakfast that's also versatile.  Keep it simple with the classic cinnamon, sugar, and butter combination or add more sweetness with your favorite chopped fruit, jams, whipped cream, Nutella, or peanut butter.  Or, you can go the savory route with chicken, eggs, vegetables, or cheese.

Crepes

Recipe by Our Best Bites

  • 2 eggs
  • 2 Tbs canola oil
  • 3 Tbs sugar (omit if making savory crepes)
  • 1 C flour
  • 1 1/3 C milk

Combine all ingredients in a blender and blend on low speed until combined, or whisk by hand until there are no lumps.
Heat a non-stick skillet to medium-high heat.  Hold pan with one hand while you pour the batter with the other hand.  Twirl the pan in a circular motion pouring just enough batter to coat the bottom of the pan.   Place on cooking surface and cook until edges are set and you can easily run a rubber spatula around the edge of the pan, 30 seconds.   Flip crepe and cook an additional 15-20 seconds.  Remove crepe from pan and either keep warm in the oven or cool to room temperature.

Fill with your choice of savory (meat, cheese, vegetable) or sweet (pudding, mousse, pastry cream, fruit) filling.  

Unfilled crepes can be stacked between sheets of waxed paper and refrigerated or frozen.  To thaw, leave at room temperature.

Traditional and tasty, these steel-cut oats will be sure to give your kids the energy to play with all those new toys throughout the day. 

No-Stick Steel-Cut Oats

Recipe by Karen Bellessa Petersen

  • 1/2 cup steel-cut oats
  • 1/4 cup pearl barley (regular not quick-cooking)
  • 1/2 tsp cinnamon
  • 2 tsp brown sugar
  • 1/8 tsp salt
  • 2 3/4 cup water
  • Optional toppings:  fresh fruit, milk, nuts, raisins etc.

Spray an oven safe dish that fits into your 5-7 quart slow cooker with non-stick cooking spray.  Place all ingredients inside dish and stir to combine.
Place dish directly inside slow cooker insert. (you do not need to add any water to the bottom of the slow cooker)  Cover the slow cooker and cook on LOW for about 7-9 hours.

Remove dish carefully and serve with desired toppings.
