Vanilla Cupcakes:

  • 1 box white cake mix
  • 4 egg whites
  • ⅓ C. oil
  • 1 C. milk
  • ⅓ C. mayonnaise
  • 2 tsp. vanilla extract

Cream Cheese Frosting:

  • 8 oz. cream cheese, softened
  • ½ C. butter, softened
  • 2 tsp. vanilla extract
  • 3–4 C. powdered sugar
  • Raspberries, blueberries, and strawberries for decoration

Directions:

1. Preheat oven to 350 and line pans with cupcake liners.

2. Sift cake mix into a small bowl; set aside.

3. In a large bowl, combine egg whites, oil, milk, mayonnaise, and vanilla extract.

4. Stir in cake mix until smooth.

5. Fill cupcake liners ¾ full and bake for 17–22 minutes or until a knife inserted near the center comes out clean.

6. For Cream Cheese Frosting: Beat cream cheese and butter. Add vanilla extract. Slowly add powdered sugar until frosting reaches desired consistency.

7. Pipe onto cooled cupcakes; top with berries.

Makes 24 cupcakes.
