{Food Dish} Cookie Contest 3rd Runner-up + Recipe

Last week we told you about judging our Cookie Recipe Contest, and we are proud to present the winner and runners up!

Utilizing the not unformidable tasting abilities of our colleagues at Deseret Book Corporate and our celebrity judges, including Lion House head baker Brenda Hopkin, we narrowed down the field. We'll be posting the taster-rated best cookie recipes over the next several days.

The 3rd runner up is … drum roll … Tiger's Blood Bites by JaNae Worthen from Kaysville, Utah.

Tigers Blood Bites
 
Crust:
1/2 C butter, room temperature
1/4 C sugar
1 C flour
1/8 tsp salt
 
Preheat oven 350 degrees. Combine flour and salt in a medium-sized bowl. Set aside. Cream butter and sugar together. Add flour mixture and mix just until combined. Press into a lightly greased 8x8 square pan. Bake crust for 15 minutes or until lightly golden brown. Remove and allow to cool while mixing remaining ingredients.
 
Coconut Layer:
10 1/2 oz sweetened flaked coconut (1 1/2  7 oz pkgs)
1 1/2 C flour
1/4 tsp salt
3 eggs
1 1/4 C sugar
1 tsp coconut extract
1 1/2 tsp vanilla
 
Mix flour, coconut, and salt together. Set aside. Beat eggs, sugar, and extracts together with a wire whisk. Stir in coconut mixture until thoroughly combined. Press evenly atop crust and bake 30 minutes or until golden brown and filling is set. Allow to cool, then cut into squares.
 
Strawberry Glaze:
6 Tbs pureed strawberries, fresh or frozen
1 1/4 C powdered sugar
1 Tbs butter, room temperature
 
Place powdered sugar in a medium sized bowl. Beat strawberry puree and butter together with a wire whisk. Pour into powdered sugar and beat until thoroughly combined. Drizzle over cooled tigers blood bites. Enjoy!
