Sopapilla Pumpkin Cheesecake Squares

These amazing cheesecake squares taste just like fall—perfect for an autumn afternoon!

  • 1 (8-ounce) can refrigerated crescent roll dough
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup pumpkin puree
  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon butter, melted
  • Cinnamon-sugar, for topping


  • 1 tablespoon butter, melted
  • 1⁄8 cup milk
  • 1½ to 2 cups powdered sugar

Preheat oven to 350 degrees F. Coat an 8x8-inch glass pan with nonstick cooking spray.

Cover bottom of pan with one half of the crescent dough, saving the other half for later. In a large bowl, beat cream cheese and powdered sugar with an electric mixer until smooth. Mix in pumpkin puree, brown sugar, and cinnamon. Spread cream cheese mixture on top of rolled out crescent dough. Using the other half of the dough, cover the cream cheese mixture. Spread 1 tablespoon melted butter over the top layer of dough.

Sprinkle with cinnamon-sugar and bake 15 to 20 minutes, or until golden brown.


In a small bowl, combine butter, milk, and sugar, stirring until smooth. Drizzle glaze over cheesecake squares. Serve warm or refrigerate until serving.

Frozen Grasshopper Cookie Pie

Prep time: 10 minutes | Total time: 10 minutes (plus freezing time) | Serves: 10

Sweetened condensed milk adds a special touch to this classic grasshopper pie.

  • 1 (8-ounce) package cream cheese, softened
  • 1 can sweetened condensed milk
  • 3 drops green food coloring
  • 1 (8-ounce) tub nondairy whipped topping
  • 16 Keebler Grasshopper Cookies, crushed
  • 1 prepared Nabisco Oreo Pie Crust

In a large bowl, beat together cream cheese and sweetened condensed milk with an electric mixer on high speed until smooth. Mix in 3 drops green food coloring. Fold in nondairy whipped topping and crushed cookies, reserving a tablespoon or 2 for garnishing. Spoon mixture into crust. Garnish with more crushed cookies.

Freeze at least 5 hours or overnight before serving.

Chocolate Chess Pie

Prep time: 20 minutes | Cook time: 45 minutes | Total time: 1 hour 5 minutes | Serves: 8

Not a pie lover? This recipe may change your mind. It tastes almost like a brownie, but in the form of a pie. 

  • 1 8-inch packaged pie crust or your favorite homemade single-crust pie shell, unbaked 
  • 1 cup granulated sugar
  • 3 tablespoons butter, melted
  • 2 large eggs, beaten
  • 4 tablespoons cocoa powder
  • ⅔ cup evaporated milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup whipped topping (optional)

Preheat oven to 350 degrees F. In an 8-inch pie plate, partially bake premade crust 10 minutes. Remove from oven and let cool 10 minutes.

In a medium bowl, combine sugar, melted butter, and eggs with an electric mixer on low speed until fully blended. Add cocoa powder, evaporated milk, vanilla extract, and salt. Mix on low speed until ingredients are fully combined and have a smooth, liquid texture. Poor pie filling into the pie crust. Bake an additional 30 minutes, or until the top is set.

Let pie cool to room temperature. If desired, top with whipped topping before serving. Cover and refrigerate to store.
